Romaine lettuce wraps are an easy, healthy way to simplify lunch or dinner prep. And who doesn’t need easy in this hectic world we reside?

Say goodbye to overcomplicated meals that can only be prepared by a cuisinier or head chef. Whether you’re a seasoned or newbie cook, this recipe is for you!

Step 1: Gather Your Ingredients

Ingredients

  •  2-4 large romaine lettuce leaves
  • 1/2 lb. ground meat or black beans (vegetarian option)
  • 1/2 cup slivered/sliced almonds
  • 1-2 cups of mushrooms (sautéd)
  • 1 tbsp. butter/olive oil
  • Pinch of salt/black pepper
  • Goya seasoning
  • 1 yellow onion chopped
  • Sprig of fresh rosemary/1/2 tsp. dried rosemary
  • 5 large basil leaves
  • 2 sprigs of thyme or 1/2 tsp. dried thyme

Step 2: Cook The Meat!

Heat the oil on medium high temperature. If you’re using butter, be mindful that butter burns easily so heat it on medium to low heat. Sauté the onions for 1-2 minutes. Then add the ground meat or beans.

Add the rosemary, basil, thyme, salt and a pinch of Goya seasoning. Cook for about 10-13 minutes or until desired doneness has been reached.

Step 3: For The Guac

  • 2 hass avocados
  • 1/2  an onion chopped
  • 1 tbsp. olive oil
  • 1/2 of a lime (juiced)
  • Hot pepper (optional)
  • 1/2 cup chopped cilantro
  • Salt to taste

Step 4: Making The Good Good Guac

Start by removing the skin and seeds of the avocados. Add the onions, pepper, cilantro, lime juice, olive oil and salt to taste. Mash vigorously and combine!

Step 5: Layer Your Wrap

Wash the lettuce leaves. Dry with paper towels or with your salad spinner. First add your meat or black beans. Then add guacamole, mushrooms and almonds.

*Optional: add bell peppers and top with parmesan.
